MARINATED ZUCCHINI

WITH AN HERBY FETA TOPPING

Marinated Zucchini topped with a ton of herbs and salty feta! The zucchini soaks up a garlicky herby sauce that’s bright and slightly sweetened. A perfect no-cook dinner party side!!

Ingredients

  • 1 1/2 lb zucchini (try to find zucchinis on the smaller end since they usually have more flavor!)
  • MARINADE:
  • 2 tbsp olive oil
  • 2 tbsp white vinegar
  • 10 mint leaves
  • 1/4 cup packed dill (stems and all)
  • 1/4 cup packed parsley (curly or flat, stems and all)
  • 1-2 tsp honey
  • Juice of a lemon
  • FETA TOPPING:
  • 6oz feta in brine, drained
  • 1/4 cup finely chopped dill
  • 1/4 cup finely chopped parsley
  • 2 tbsp finely chopped mint
  • 1/4 cup dill fonds (for garnish)

Instructions

  1. 1. Cut the zucchini into 1" x .25" pieces. (refer to the pictures below for reference!)
  2. 2. In a blender, add 2 tbsp olive oil, 2 tbsp white vinegar, 10 mint leaves, 1/4 cup packed dill, 1/4 cup packed parsley, 1 tsp honey, and the juice of half a lemon. Blend, then adjust for honey and lemon.
  3. 3. Pour the marinade over the zucchini and mix well. Let the zucchini stand for at least 30 minutes, up to an hour. (See Note 1)
  4. 4. Crumble the feta into small pieces using a fork or your hands. Mix in the chopped dill, parsley, and mint.
  5. 5. Spoon the zucchini onto a large plate or platter. Sprinkle on the feta mixture and top with the dill fonds.

Notes

1. You can make the zucchini earlier in the day if you'd like. Store it in the fridge and remove it 30 minutes before serving.
